Perfect Muffins

Muffins, to me, are a less-guilt-inducing substitute for cupcakes, and let's face it, who doesn't want a cupcake wannabe for breakfast every morning?  Don't worry, it's a muffin, they're MADE for breakfast. 

This is a great basic muffin recipe that you can adapt with any add ins that you like.  Here I've used roughly chopped chocolate chips, but you can use berries, nuts, or any classic muffin combo that you love. They are so easy to make, and you don't even need a mixer.  In fact, it's important not to use a mixer to ensure that the batter isn't over mixed.

Basic Muffins
(Makes about 24)
4 cups flour
4 tsp. baking powder
1/2 tsp. salt
1 heaping cup sugar
1 1/3 cup milk
Vanilla
2 eggs
2 sticks melted butter
1 1/2 cup add ins
